A different kind of salad


I know I haven't been posting very festive foods but to be honest with you too many treats around the holidays makes me feel too sick to enjoy the actual holiday.  I'm trying to stay "wholesome for the holidays" this year.

My neighbor from Bulgaria gave me the idea for this salad.  She pointed out to me that a salad doesn't always need lettuce, dressing, croutons, etc.  A salad can be any combination of fresh veggies.  

Here I shredded 1 turnip and  3 carrots then tossed them with fresh parsley, olive oil, fresh squeezed lemon juice, and salt& pepper.  It was a refreshing change and added a colorful enhancement to our standard lunch quesadillas.

  1. That is a salad we eat in Japan, with soy sauce/vinegar dressing. I knew you had Japanese in your blood.

    My new thing is to make quiche with left over spinach from Costco. I can put so much spinach in it, and Jerome still loves it.

  4. did you use the fine or regular shredder attachment?

  5. I used the regular shredder attachment - I don't know what i would use the fine grater for though so don't tempt me with another kitchen tool purchase
