Here's how we eat it


This is was a simple 15 minute millet meal that all but one of my children ate.  


I cooked the millet in the pressure cooker which took a total of 15 min (10 min high pressure then quick release) then tossed it with a bit of olive oil, cumin, garlic powder and salt.   It was topped on a pile of fresh baby spinach then I let everyone choose their own toppings.  We had available avocado, black beans, tomatoes, cilantro, shredded cheese, and salsa.  


My sister Cheryl does a Greek version of this with quinoa, red onions, feta, cucumbers, tomatoes, parsley, peppers and olives - it is just as satisfying!  We all got pressure cookers last year as part of the "kitchen arms race" and there is no greater group to collaborate with than my sisters.  


As for children (actually it's just one child) not eating what is prepared, that is problem that needs help beyond my sister group.  Any suggestions?

  1. That looks so good! I want a pressure cooker, too, and a snap press, and a top lock machine and.. !
    Jerome tries really hard but doesn't enjoy vegetables quite yet. The rule here is that he has to try everything at least once at every meal. We eat home baked whole wheat bread and brown rice, so I decided he would probably be fine. he has come a long ways from Dunkin Donuts and vitamins.

  3. Al, great recipe. I bought some quinoa from the grain store. Still deciding what I'll do with it. I still need to catch up with my kitchen arms!!

  4. I'm interested in what others say about trying to get the hold out to eat what is prepared. In our situation, Benjamin is trained to be suspicious of food since it caused him pain, so he won't even put it in his mouth. Sometimes I don't buy that it is all because of the EE since if it looks like fruit, or fruit snack, he'll eat it without hesitation. We may end up in some occupational therapy for feeding, but I'm holding off until after age two.
    I wish I had some suggestions, but I'll take any others give you!
